Rolled ice cream is a sensational Thai frozen dessert, created on the streets of Thailand in 2011. Unlike most ice creams made ahead of time in an electronic ice cream machine, rolled ice cream—also known as “I-TIM-PAD” or stir-fried ice cream —is made to order by hand.
Valeria, the Founder, who always keeps an eye to innovation and creativity, decided to make the rolls her own way, opening in Dubai the registered trademark of Mr Frost® on 1st May 2015. The ice cream roll is made by pouring a liquid base on an extremely cold (-35°C) steel surface that allow very small ice crystals to be formed quickly. In just under two minutes and without adding in additional fat, stabilizers and emulsifiers these ice molecules create a delicious texture in the form of creamy frozen roll. At Mr Frost® Valeria makes her own recipes and only uses different milk variety (law fat milk, lactose free milk, soya milk, camel milk) to suit even a clientele that have allergies or health conditions. Metal spatulas are then used to chop toppings into the base and scrape it around to create air. The rolls are then placed carefully in a cup and ready for a variety of toppings and fresh fruit.
